Serving Size: 4 servings
Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 4 cloves of garlic, minced
- 2 lemons, one juiced and one sliced
- 1/4 cup olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Fresh parsley for garnish
Instructions:
1. Preheat your oven to 425°F (220°C).
2. In a small bowl, mix together the minced garlic, lemon juice, olive oil, salt, pepper, thyme, and rosemary.
3. Pat the chicken dry with paper towels and place it in a roasting pan.
4. Rub the garlic and lemon mixture all over the chicken, making sure to get under the skin for extra flavor.
5. Stuff the cavity of the chicken with lemon slices.
6. Roast the chicken in the preheated oven for about 1 to 1.5 hours, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
7. Remove from the oven and let rest for 10 minutes.
8. Garnish with fresh parsley before serving.
