A delicious Eastern chicken soup packed with flavors from Asian spices, providing a warming meal for chilly days. Preparation time: 40 minutes. Serves: 4.

Ingredients:

- 400 g chicken breast, diced
- 1 liter chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cm fresh ginger, grated
- 2 carrots, sliced
- 1 red bell pepper, sliced
- 100 g mushrooms, sliced
- 200 g noodles
- 2 spring onions, chopped
- Fresh coriander for garnish
- Salt and pepper to taste

Instructions:

1. Heat the sesame oil in a large pot and add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are soft.
2. Add the diced chicken and cook until golden brown.
3. Pour the chicken broth into the pot and add the soy sauce, carrots, bell pepper, and mushrooms. Simmer for about 15 minutes.
4. Add the noodles to the soup and cook according to the package instructions until the noodles are tender.
5. Season with salt and pepper. Serve the soup hot, garnished with chopped spring onions and fresh coriander.
