Asian-Style Trout Soup

A delicious trout soup that combines Finnish trout with Asian flavors. It's a perfect starter that warms both body and soul. Preparation Time: 45 minutes

Ingredients:
- 250 g trout fillets - 4 cm ginger, grated
- 1 bunch green onions
- 3 garlic cloves
- 2 stalks celery and leaves
- 1 piece of leek, sliced
- 1 tbsp oil
- 2 tsp sesame oil
- 2 tomatoes
- 100 g shiitake or shimeji mushrooms
- 4 tbsp white wine
- 2 tbsp cognac
- 1 tbsp fish sauce
- 5 dl vegetable broth
- 1 fish stock cube
- 3 dl water
- 2 tsp soy sauce
- Juice of 1 lime
Instructions:
1. Clean the trout and fillet it. Cut the fillets into bite-sized pieces, season with salt, and refrigerate. 2. Peel and grate the ginger. Chop the green parts of the green onions into inch-long pieces. Peel the garlic cloves. Chop the celery stalks and set the leaves aside.
3. Heat oil and sesame oil in a pot. Add the grated ginger and stir.
4. Add the chopped mushrooms, leek, green onions, celery stalks, and chopped tomatoes.
5. Pour in the white wine and cognac. Let it simmer for a moment.
6. Add the vegetable broth, fish sauce, soy sauce, and water. Allow it to boil briefly.
7. Add the cut trout to the soup. Remove the pot from heat and let the fish simmer until cooked, about 10 minutes.
8. Check the seasoning, squeeze lime juice into the soup, garnish with celery leaves, and serve.
