Ingredients:
- 500 g chicken fillets
- 1 liter chicken broth
- 2 medium carrots
- 2 potatoes
- 1 onion
- 2 celery stalks
- 1 bell pepper
- 200 g green beans
- 2 garlic cloves
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- Fresh parsley for garnish
Instructions:
1. Peel and chop the carrots, potatoes, onion, and celery.
2. In a pot, heat a little oil and sauté the onion and garlic until fragrant.
3. Add the chicken fillets and cook until they are nicely browned.
4. Add the carrots, potatoes, celery, bell pepper, and green beans to the pot.
5. Pour in the chicken broth and season with salt, pepper, and thyme.
6. Simmer the soup on low heat for about 30 minutes, until the vegetables are tender.
7. Taste and adjust seasoning if needed.
8. Serve the soup warm, garnished with fresh parsley.
