A delicious and quick dish combining pork tenderloin, pineapple, and a flavorful sauce. This meal will please the whole family and is perfect served with boiled basmati rice. Preparation Time: 30 minutes

Ingredients:
- 800 g pork tenderloin - 1 can pineapple chunks
- 1 dl soy sauce
- 1 tablespoon grated fresh ginger
- 2 garlic cloves, grated
- 3 tablespoons brown sugar
- Fine sea salt
- Black pepper, to taste
- 1/2 red chili (optional)
- 1/2 bunch fresh coriander, chopped (stems included)
- 1/2 bunch coriander leaves, for garnish
- Oil for frying
Instructions:
1. In a bowl, combine soy sauce, pineapple juice, ginger, garlic, chopped coriander, and brown sugar. Add chili if using.2. Remove the membranes from the pork tenderloin and slice it first into strips and then into bite-sized pieces.
3. Sauté the pork strips in oil in 2-3 batches. Season with salt and black pepper.
4. Return all the pork strips to the pan. Add pineapple chunks and sprinkle with brown sugar. Sauté briefly.
5. Pour in the marinade, mix, and let simmer gently for about 10 minutes.
6. Finally, sprinkle with coriander leaves and serve with boiled basmati rice.
