Ingredients:
- 200 g pasta (e.g., spaghetti)
- 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese (grated)
- Salt to taste
- Black pepper to taste
- Fresh parsley (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions.
2. Chop the bacon into small pieces and fry in a pan until golden brown.
3. In a bowl, crack the eggs and add the grated Parmesan cheese and black pepper. Mix well.
4. Drain the cooked pasta, reserving a little cooking water.
5. Combine the hot pasta with the bacon in the pan and stir.
6. Remove the pan from heat and quickly add the egg mixture, stirring to prevent the eggs from scrambling.
7. If needed, add a bit of reserved cooking water to achieve a creamy consistency.
8. Serve immediately, garnished with fresh parsley, and add more Parmesan cheese if desired.
