A refreshing salad that evokes warm summer evenings and sunshine. It’s a perfect side dish or a lighter main course.

Serving Size: 2-4 servings
Ingredients:
- 150 g fresh salad mix
- 1 avocado
- 200 g cherry tomatoes
- 100 g feta cheese
- 1/2 dl olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Rinse the salad mix and dry it thoroughly.
2. Cut the avocado in half, remove the pit, and slice the fruit.
3. Halve the cherry tomatoes.
4. Crumble the feta cheese.
5. In a bowl, combine the salad mix, avocado slices, cherry tomatoes, and feta cheese.
6. Prepare the dressing by mixing the olive oil and balsamic vinegar in a bowl. Season with salt and pepper.
7. Pour the dressing over the salad and toss gently.
8. Garnish with fresh basil before serving.
