Ingredients:
- 500 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 200 g spinach
- 100 g feta cheese, crumbled
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain and set aside.
2. Heat olive oil in a large pan over medium heat and add minced garlic. Sauté until slightly softened.
3. Add the diced red bell pepper to the pan and cook for a few minutes until softened.
4. Stir in the cherry tomatoes and spinach, cooking until the spinach has wilted.
5. Combine the cooked pasta with the vegetables and season with salt and pepper.
6. Add the crumbled feta cheese and mix well.
7. Serve the pasta topped with fresh basil.
