Ingredients:
- 2 medium sweet potatoes
- 1 cup rolled oats
- 1/2 cup black beans, rinsed and drained
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/2 cup fresh cilantro, chopped
- 1 tablespoon olive oil
- 4 whole grain buns
- Lettuce, tomato, and avocado for topping
Instructions:
1. Peel and boil the sweet potatoes until tender, about 15-20 minutes.
2. Drain the sweet potatoes and mash them in a bowl.
3. Add the oats, black beans, salt, paprika, black pepper, and cilantro to the mash. Mix well.
4. Shape the mixture into four burger patties.
5. Heat the olive oil in a skillet over medium heat and cook the patties for about 5-7 minutes on each side until golden brown.
6. Assemble the burgers in the buns and add your desired toppings, such as lettuce, tomato, and avocado.
7. Serve immediately and enjoy!
