Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 100 g fresh basil, chopped
- 50 g Parmesan cheese, grated
- Salt and pepper to taste
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a little pasta water.
2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until golden.
3. Add diced bell pepper and cook for about 5 minutes until softened.
4. Add halved cherry tomatoes and cook for another 3-4 minutes until they begin to soften.
5. Combine the cooked pasta in the skillet and mix well. If needed, add a little reserved pasta water to prevent the pasta from drying out.
6. Stir in chopped basil, grated Parmesan cheese, salt, and pepper. Mix all ingredients thoroughly.
7. Serve immediately and enjoy the sunset!
