A simple and delicious pasta dish perfect for a busy weeknight. The combination of leeks, bacon, and a creamy egg-parmesan sauce makes it a delightful option.

Ingredients:

- 300 g pasta (e.g., spaghetti or penne)
- 100 g bacon
- 1 leek
- 2 eggs
- 50 g parmesan cheese
- 200 ml cream
- Salt and pepper to taste
- Fresh parsley (optional)

Instructions:

1. Cook the pasta according to package instructions in salted water. Drain, reserving a bit of the cooking water.
2. Cut the bacon into small pieces and fry in a pan until crispy.
3. Add the chopped leek to the bacon and cook until softened.
4. In a bowl, whisk together the eggs, cream, and grated parmesan. Season with salt and pepper.
5. Combine the pasta, bacon, and leek in the pan. Pour the egg mixture over and stir quickly. Add reserved cooking water as needed for a silky sauce.
6. Serve immediately, garnished with parsley if desired.
