Creamy Pasta with Salmon and Pistachio Crumble

Ingredients:
- 250 g pasta (e.g., spaghetti or fusilli) - 200 ml cream
- 2 eggs
- 100 g grated Parmesan cheese
- 100 g diced bacon
- 1 leek, sliced
- Salt and pepper to taste
- 2 salmon fillets
- 100 ml breadcrumbs
- 50 g crushed pistachios
- Olive oil for frying
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. 2. In a pan, fry the diced bacon until crispy. Add the sliced leek and sauté for a few more minutes.
3. In a bowl, mix together the cream, eggs, grated Parmesan, salt, and pepper.
4. Drain the cooked pasta and combine it with the bacon and leek mixture. Quickly stir in the cream and egg mixture to avoid scrambling the eggs.
5. In a separate pan, cook the salmon fillets in olive oil until they are cooked through. Season with salt and pepper.
6. Mix the breadcrumbs and crushed pistachios together and sauté in a small amount of olive oil until golden brown.
7. Serve the pasta alongside the salmon fillets, topped with the pistachio breadcrumb mixture. Enjoy!
