Ingredients
Crust: - 100 g vegan margarine
- 0.5 dl sugar
- 1 tsp vanilla sugar
- 1 tsp baking powder
- 3.5 dl all-purpose flour
- 0.5 dl oat milk
- Margarine and breadcrumbs for greasing the pan
Filling:
- 400 g rhubarb (chopped)
- 1 dl sugar
- 1 tsp vanilla sugar
- 1 tbsp potato starch
Instructions
1. Preheat the oven to 175°C (350°F). 2. Prepare the pie crust: melt the vegan margarine and mix it with sugar, vanilla sugar, and baking powder.
3. Gradually add the all-purpose flour to the mixture and stir until smooth. Pour in the oat milk and mix well.
4. Grease the pie pan with margarine and sprinkle breadcrumbs on the bottom.
5. Pour the dough into the pan and smooth the surface.
6. Prepare the filling: combine the rhubarb, sugar, vanilla sugar, and potato starch in a bowl.
7. Spread the rhubarb mixture over the pie crust.
8. Bake in the oven for about 30-40 minutes or until the top is a beautiful golden brown and the filling is cooked.
9. Allow to cool before serving.
