Description: This gingerbread cake brings the festive spirit to your home and is a perfect dessert or treat for your coffee table.

Serving Size: 10 servings
Ingredients:
- 200 g gingerbread cookies
- 100 g butter
- 400 g mascarpone cheese
- 2 dl heavy cream
- 1 dl powdered sugar
- 1 tsp vanilla sugar
- 1 dl Christmas spice mix (cinnamon, cloves, ginger)
- For decoration: chocolate shavings and fresh berries
Instructions:
1. Crumble the gingerbread cookies finely.
2. Melt the butter and mix it with the crumbled gingerbread.
3. Press the gingerbread mixture firmly into the base of a springform pan.
4. Whip together the mascarpone cheese, heavy cream, powdered sugar, vanilla sugar, and Christmas spice mix until the mixture is fluffy.
5. Spread the mascarpone mixture evenly over the gingerbread base.
6. Allow the cake to cool in the refrigerator for at least two hours before serving.
7. Decorate the cake with chocolate shavings and fresh berries before serving.
