A traditional, rich, and creamy New York cheesecake, perfect for special occasions. Serve with strawberry compote!

Ingredients:

- 200 g digestive biscuits
- 100 g butter, melted
- 900 g cream cheese
- 250 g sugar
- 3 tbsp cornstarch
- 1 tsp vanilla extract
- Juice and zest of 2 lemons
- 4 eggs
- 200 g sour cream

Instructions:

1. Prepare the Pan: Grease a springform pan (about 23 cm in diameter) and line it with parchment paper.
2. Crust: Crush the digestive biscuits and mix with the melted butter. Press the mixture firmly into the bottom of the prepared pan.
3. Filling: In a large bowl, beat the cream cheese and sugar until smooth. Incorporate the cornstarch, vanilla extract, lemon juice, and zest, followed by the eggs one at a time, mixing well after each addition.
4. Sour Cream: Finally, gently fold in the sour cream until just combined.
5. Bake: Pour the filling over the crust. Bake at 150°C (300°F) for about 60 minutes.
6. Residual Heat: Turn off the oven and let the cheesecake sit in the oven for an additional hour.
7. Cool: Allow the cheesecake to cool at room temperature, then transfer it to the refrigerator. Chill overnight to set.
8. Serve: Serve the cheesecake with strawberry compote.
