Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g fresh spinach
- 1 tsp dried oregano
- Salt and pepper to taste
- Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve some cooking water.
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, and sauté for about 3-4 minutes.
3. Add bell pepper and zucchini, and cook for another 5-7 minutes until the vegetables are tender.
4. Add cherry tomatoes, spinach, and oregano. Stir and cook for an additional 2-3 minutes.
5. Toss the cooked pasta with the vegetables. If needed, add a little cooking water to prevent the pasta from drying out. Season with salt and pepper.
6. Serve immediately, and sprinkle with grated Parmesan cheese if desired.
