Ingredients:
- 400 g chicken fillets - 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika powder
- 1 lemon
- 150 g fresh salad greens
- 100 g cherry tomatoes
- 1 avocado
- 50 g feta cheese
- 1/4 red onion
- 2 tbsp balsamic vinegar
Instructions:
1. Cut the chicken fillets into strips and marinate them in olive oil, salt, black pepper, and paprika powder for about 10 minutes.2. Cook the marinated chicken strips in a hot skillet for 5-7 minutes until cooked through and golden brown.
3. Squeeze the lemon juice over the chicken during the last minute of cooking.
4. Prepare the salad by combining fresh salad greens, halved cherry tomatoes, diced avocado, crumbled feta cheese, and thinly sliced red onion.
5. Drizzle the salad with balsamic vinegar and season to taste.
6. Serve the cooked chicken strips on top of the salad and enjoy a summer evening!
