A delightful pairing of sweet doughnuts and refreshing lemonade, perfect for celebrating May Day!
Preparation Time: 1 hour + rising time
Serving Size: 10-12 doughnuts

Ingredients:

- 2.5 dl milk
- 25 g fresh yeast
- 1 dl sugar
- 1/2 tsp salt
- 1 tsp cardamom
- 1 egg
- 7-8 dl all-purpose flour
- 50 g butter (melted)
- Oil for frying

Sima:

- 1 l water
- 1 dl sugar
- 1 dl brown sugar
- 1 lemon
- 1/4 tsp yeast
- 10-15 raisins

Instructions:

1. Warm the milk to body temperature and dissolve the fresh yeast in it.
2. Add sugar, salt, cardamom, and the egg. Mix well.
3. Gradually add the flour and knead the dough until it is elastic.
4. Incorporate the melted butter and knead until the dough pulls away from the bowl.
5. Let the dough rise under a cloth in a warm place for about 1 hour, until it has doubled in size.
6. Roll out the dough to about 1.5 cm thick and cut out round shapes.
7. Let the doughnuts rise for another 30 minutes.
8. Heat oil in a pot and fry the doughnuts until golden brown.
9. For the sima, bring water to a boil and stir in the sugars. Add sliced lemon and yeast.
10. Allow the sima to cool, add raisins, and bottle it. Let it ferment in a warm place for 24 hours.
11. Enjoy the doughnuts with sima and celebrate the joy of May Day!
