A delicious and refreshing spring potato salad, perfect for festive gatherings. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g new potatoes - 1 dl sour cream
- 1 dl mayonnaise
- 1 small red onion
- 1 dl fresh dill
- 1 dl pickles
- Salt and pepper to taste
Instructions:
1. Boil the new potatoes with their skins in salted water until tender. Allow to cool.2. Peel and chop the red onion and pickles.
3. Dice the cooled potatoes into small cubes.
4. In a bowl, mix the sour cream and mayonnaise. Add the chopped onion, pickles, and dill.
5. Gently fold in the potato cubes and season with salt and pepper.
6. Let the salad chill in the refrigerator for about 15-20 minutes before serving.
