A rich and flavorful soup that is easy to prepare, perfect as an appetizer or a light meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g mushrooms
- 1 large onion
- 2 garlic cloves
- 3 tbsp butter
- 1 l vegetable broth
- 2 dl heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onion and garlic.
2. Clean the mushrooms and slice them.
3. Heat the butter in a large pot over medium heat. Add the onion and garlic, sautéing for about 5 minutes until soft.
4. Add the sliced mushrooms to the pot and cook for about 5-7 minutes until they are soft and the moisture has evaporated.
5. Pour in the vegetable broth and let the soup simmer for about 10 minutes.
6. Stir in the heavy cream and heat for a few more minutes. Season with salt and pepper.
7. Serve hot, garnished with fresh parsley.
