Ingredients:
- 1 cm thick slice of aged, white mold goat cheese
- Oak leaf lettuce
- Arugula
- Mint
- Cooked green beans (5 min.)
- Thinly shaved striped beet
- Blackberries
- Honey
- Pumpkin seeds
- Sunflower seeds
Honey Vinaigrette:
- 1 tbsp fresh honey
- 2 tbsp light balsamic vinegar
- 4 tbsp olive oil
- Salt and black pepper to taste
Instructions:
1. Prepare the salad ingredients. Rinse and dry the oak leaf lettuce, arugula, and mint.
2. Cook the green beans for 5 minutes and drain.
3. Thinly slice the striped beet.
4. Assemble the salad on a plate: start with the salad greens, add the beet slices, green beans, blackberries, and finally the goat cheese slice.
5. Prepare the honey vinaigrette by mixing honey, balsamic vinegar, olive oil, salt, and black pepper in a bowl.
6. Drizzle the vinaigrette over the salad and enjoy!
