A rich and flavorful creamy mushroom soup that's perfect as a starter or a light main dish.
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g fresh mushrooms
- 1 onion
- 2 garlic cloves
- 3 tbsp butter
- 1 l vegetable broth
- 2 dl cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Chop the onion and garlic finely.
2. Slice the mushrooms.
3. Heat the butter in a pot and add the onions. Sauté for about 5 minutes.
4. Add the mushrooms and continue cooking until they are softened.
5. Pour in the vegetable broth and let it simmer for about 15 minutes.
6. Blend the soup with an immersion blender until smooth.
7. Stir in the cream and mix well. Heat through, but do not bring to a boil.
8. Season with salt and pepper to taste.
9. Serve hot, garnished with fresh parsley.
