Ingredients:
- 2 large tortillas - 1 cup hummus
- 1 ripe avocado
- 1 bell pepper (e.g., red or yellow)
- 1 small zucchini
- 1 cup cherry tomatoes
- 1 tablespoon olive oil
- Salt and pepper to taste

Instructions:
1. Prepare the Vegetables: Cut the bell pepper and zucchini into small pieces. Halve the cherry tomatoes. 2. Roast the Vegetables: Heat the olive oil in a pan over medium heat.
