- 100 g rice
- 300 ml vegetable broth

Instructions:
1. Heat olive oil in a pan over medium heat. 2. Season the chicken breasts with salt, black pepper, and thyme. Add to the pan and cook for 5-7 minutes on each side, until cooked through.
3. Add the crushed garlic to the pan and sauté for an additional minute.
4. Cook the rice according to the package instructions using the vegetable broth.
5. Chop the vegetables and add them to the pan with the chicken, cooking for about 5-10 minutes until they are tender.
6. Mix the cooked rice into the pan with the vegetables and chicken, and add the lemon juice. Stir well to combine.
