Serving Size: 4 servings
Ingredients:
- 250 g pasta (e.g., penne or fusilli)
- 2 tablespoons olive oil
- 1 garlic clove, chopped
- 200 g fresh vegetables (e.g., zucchini, bell pepper, spinach)
- 100 ml cream
- 50 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a little pasta water.
2. Heat the olive oil in a pan over medium heat. Add the chopped garlic and sauté until golden brown.
3. Add the vegetables to the pan and sauté for a few minutes until they are tender.
4. Stir in the cream and Parmesan cheese. Let it simmer on low heat for a few minutes.
5. Add the cooked pasta to the pan and mix well. If needed, add a little reserved pasta water to achieve a nice consistency.
6. Season with salt and pepper. Garnish with fresh basil before serving.
