A delightful pancake inspired by the classic Runeberg tart, featuring a crispy exterior and moist interior, perfect for a sweet treat.
Preparation Time: 30 minutes
Serving Size: 8-10 pieces

Ingredients:

- 100 g butter
- 1 dl sugar
- 1 egg
- 2 dl all-purpose flour
- 0.5 dl almond flour
- 1 tsp baking powder
- 0.5 dl raspberry jam
- Powdered sugar (for decoration)

Instructions:

1. Melt the butter in a cast-iron pan over medium heat. Add the sugar and stir until the sugar slightly melts into the butter. Do not let it boil.
2. Remove the pan from heat and let the mixture cool to room temperature.
3. Add the egg and mix well.
4. In a bowl, combine the dry ingredients (all-purpose flour, almond flour, and baking powder) and pour them into the pan. Mix into a smooth batter.
5. Add the raspberry jam on top of the batter and gently fold it in.
6. Bake the pancake in a preheated oven at 180°C (356°F) for about 20-25 minutes, or until the top is golden brown.
7. Allow the pancake to cool before dusting with powdered sugar.
