Delicious waffles inspired by the traditional Runeberg cake, perfect for brunch or coffee time. Preparation Time: 30 minutes
Serving Size: 6-8 waffles
Ingredients:
- 100 g butter
- 1 dl sugar
- 2 eggs
- 1 dl almond flour
- 1 dl crushed gingerbread cookies
- 1 dl apple juice
- 1 tsp baking powder
- 1 tsp vanilla sugar
- A pinch of salt
Instructions:
1. Melt the butter and let it cool slightly.
2. In a bowl, whisk together the sugar and eggs until frothy.
3. Add the melted butter to the mixture and mix well.
4. Stir in the almond flour, crushed gingerbread cookies, apple juice, baking powder, vanilla sugar, and salt. Combine until a smooth batter forms.
5. Preheat the waffle iron and lightly grease it.
6. Pour batter into the center of the waffle iron and close the lid. Cook the waffle for about 3-5 minutes or until golden brown.
7. Carefully remove the waffles from the iron and let them cool for a moment before serving.
