A delicious and moist roll cake reminiscent of traditional Runeberg tarts. Perfect for everyday and festive occasions. Preparation Time: 1 hour
Serving Size: 8-10 servings
Ingredients:
- 120 g butter- 1 dl sugar
- 2 eggs
- 1 dl almond flour
- 2 dl all-purpose flour
- 1 tsp baking powder
- 1 dl milk
- 1 tbsp rum (optional)
- Raspberry jam for filling
- Powdered sugar for decoration
Instructions:
1. Grease and flour a baking sheet.2. Melt the butter and let it cool.
3. Whisk the sugar and eggs until pale and fluffy.
4. Add the melted butter to the mixture and mix well.
5. In a separate bowl, combine the almond flour, all-purpose flour, and baking powder.
6. Gradually add the dry ingredients to the batter, alternating with the milk, and mix until smooth.
7. Pour the batter onto the baking sheet and spread it evenly.
8. Bake at 200°C (400°F) for about 10-12 minutes, until golden brown on top.
9. Remove the cake from the oven and turn it onto a clean piece of parchment paper.
10. Spread raspberry jam over the cake layer and roll it up tightly.
11. Allow to cool before serving and dust with powdered sugar.
