Huli-Huli Chicken Wings

A delicious Hawaiian-style chicken wing recipe with a sweet and tangy marinade. Preparation Time: 15 minutes (plus marinating time)
Serving Size: 4 servings
Ingredients:
- 1 cup fresh pineapple juice
- ½ cup soy sauce
- ½ cup brown sugar (or cane sugar)
- 1 inch piece of ginger, minced
- 2-3 cloves garlic, minced
- 2 teaspoons chicken bouillon
- 2 teaspoons tomato paste
- ½ - 1 teaspoon red chili flakes
- 2.2 pounds chicken wings
Instructions:
1. In a bowl, mix together all the marinade ingredients: pineapple juice, soy sauce, brown sugar, ginger, garlic, chicken bouillon, tomato paste, and chili flakes.
2. Place the chicken wings in a resealable plastic bag and pour ⅔ of the marinade into the bag. Reserve the remaining marinade for basting.
3. Remove air from the bag, seal it, and shake to evenly coat the wings with the marinade. Let them marinate in the refrigerator for a few hours.
4. Preheat the oven to 410°F (210°C).
5. Line a baking tray with parchment paper and place the marinated wings on the tray.
6. Bake in the oven for about 60 minutes.
7. Baste the wings with the reserved marinade and turn them a couple of times during cooking for even color and flavor.
8. Remove from the oven when they are nicely colored and cooked through.
Serve the wings with fresh vegetables and blue cheese dip for a delightful meal!
