A delicious and surprising addition to your party table, these savory churros combine the bold flavors of chorizo and jalapeño for a delightful kick, paired perfectly with a dipping mayonnaise.

Ingredients:
- 1 cup (250 ml) water
- 1/2 cup (125 g) butter
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 raw chorizo sausage (chopped)
- 1 jalapeño (finely chopped)
- 1/2 teaspoon smoked paprika
- 2 cups (250 g) all-purpose flour
- 2 eggs
- 1-2 liters oil for frying
- 1 teaspoon flaky sea salt
- Mayonnaise for dipping
Instructions:
1. In a saucepan, heat the water, butter, and sugar until boiling. Add the salt, chorizo, jalapeño, and smoked paprika, mixing well.
2. Stir in the flour until the dough pulls away from the sides of the pan. Remove from heat and let the dough rest for 10 minutes.
3. Incorporate the eggs one at a time, mixing thoroughly after each addition.
4. Transfer the dough to a piping bag fitted with a small star tip.
5. Heat the oil in a deep pot to 180°C (350°F). Pipe out about a finger-length piece of dough into the hot oil. Fry the churros for about 4 minutes, turning occasionally.
6. Remove the cooked churros and place them on paper towels to drain excess oil. Sprinkle with flaky sea salt.
7. Serve the churros warm with mayonnaise or your favorite dip.
