A velvety and flavorful mushroom soup, perfect as a starter or a light main course. Preparation time is about 30 minutes and serves 4.
Ingredients:
- 400 g mushrooms
- 1 medium onion
- 2 garlic cloves
- 1 tbsp butter
- 1 l vegetable broth
- 200 ml cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the onion and garlic.
2. Clean the mushrooms and slice them.
3. Heat the butter in a pot over medium heat. Add the onion and garlic, sauté until they are soft.
4. Add the sliced mushrooms and cook for about 5-7 minutes until the mushrooms are slightly browned.
5. Pour in the vegetable broth and let the soup simmer for about 15 minutes.
6. Blend the soup with an immersion blender or in a regular blender until completely smooth.
7. Stir in the cream and season with salt and pepper. Heat the soup again, but do not boil.
8. Serve warm, garnished with fresh parsley.
