Ingredients:
- 250 g flour
- 125 g cold butter (diced)
- 1/4 tsp salt
- 4-5 tbsp cold water
- 3-4 apples (e.g., Antonovka or Granny Smith)
- 150 g blue cheese (e.g., Roquefort or Gorgonzola)
- 2-3 tbsp honey
- 1 tsp cinnamon
- 1 egg (for egg wash)
Instructions:
1. Prepare the dough: In a bowl, mix the flour and salt. Add the cold butter and rub it into the flour until crumbly. Add cold water until the dough forms. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
2. Peel and slice the apples into thin slices. In a bowl, toss the apple slices with honey and cinnamon.
3. Preheat the oven to 200°C (400°F).
4. Roll out the dough on a floured surface into a round shape (about 30 cm in diameter). Transfer the dough to a baking paper-lined tray.
5. Arrange the apple slices in the center of the dough, leaving space around the edges. Crumble the blue cheese over the apples.
6. Fold the edges of the dough over the apples. Brush the edges with a mixture of beaten egg and water.
7. Bake the galette in the oven for about 30-35 minutes, until the crust is golden brown and the apples are soft.
8. Allow the galette to cool slightly before serving.
