Serving Size: 2-3 servings
Ingredients:
- 250 g pasta (e.g., spaghetti or fusilli)
- 200 g cooked and diced beetroot
- 150 g blue cheese
- 100 ml cream
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh basil (for garnish)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little cooking water.
2. Heat olive oil in a pan and add the diced beetroot. Sauté for a few minutes.
3. Add the blue cheese and cream to the pan. Stir until the cheese melts and the mixture is smooth.
4. Combine the cooked pasta with the beetroot mixture. Mix thoroughly and add reserved cooking water if the sauce is too thick.
5. Season with salt and pepper. Serve with fresh basil on top.
