A delicious and nutritious vegetable mince mix perfect for tacos, pasta sauce, or as a filling for pastries.

Serving Size: 4-6 servings
Ingredients:
- 1 large onion
- 3 garlic cloves
- 2 carrots
- 2 celery stalks
- 1 red bell pepper
- 1 zucchini
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp paprika
Instructions:
1. Finely chop the onion and garlic.
2. Grate the carrots coarsely.
3. Slice the celery and red bell pepper.
4. Dice the zucchini.
5. If you have a food processor, you can pulse all the vegetables into a mince-like texture. Note that chopping the onion by hand can help avoid a bitter taste.
6. Heat the olive oil in a large skillet over medium heat.
7. Add the onion and garlic to the skillet, cooking until soft.
8. Add the grated carrots, sliced celery, bell pepper, and zucchini to the skillet. Sauté the mixture for about 10-15 minutes until the vegetables are tender.
9. Season the mixture with salt, black pepper, oregano, and paprika. Stir well and cook for another few minutes.
10. Serve the vegetable mince mix as desired.
