This delicious and nutritious vegetable pasta is quick to prepare and perfect for a weeknight dinner. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- Salt and pepper to taste
- 50 g grated Parmesan cheese (optional)
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve some cooking water.
2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and crushed garlic. Sauté for about 2-3 minutes until the onions are soft.
3. Add the diced bell pepper and sliced zucchini to the skillet. Cook for about 5-7 minutes until the vegetables are slightly softened.
4. Add the halved cherry tomatoes and spinach to the skillet. Cook for another 2-3 minutes until the spinach is wilted.
5. Toss the cooked pasta with the vegetables in the skillet. Add reserved cooking water as needed to create a saucier consistency. Season with salt and pepper.
6. Serve the pasta on plates, topped with grated Parmesan cheese and fresh basil if desired.
