This warm potato pancake is the perfect snack for a skiing trip. It's easy to prepare and tastes great cooked over a campfire. Serve it alongside egg butter and sausage.
Preparation Time: 30 minutes
Serving Size: 4-6 servings

Ingredients:

- 0.5 l thick mashed potatoes
- 6 dl heavy cream or coffee cream
- 1 tbsp fine sea salt
- 4 whole eggs
- 3 egg yolks
- 70 g butter

Instructions:

1. Melt the butter in a skillet over low heat.
2. In a bowl, mix the mashed potatoes, heavy cream, sea salt, eggs, and egg yolks until well combined.
3. Pour the mixture into the melted butter in the skillet and cook over low heat until the pancake is golden brown and set.
4. Cut into serving pieces and serve warm with sausage and egg butter.
