A delicious and hearty American breakfast that's perfect for a weekend brunch. Preparation time is about 30 minutes and serves 4.Ingredients:
- 4 eggs
- 4 slices of bacon
- 2 large potatoes
- 1 bell pepper (red or green)
- 1 onion
- Salt and pepper to taste
- Oil for frying
- Fresh parsley for garnish
Instructions:
1. Peel and dice the potatoes. Boil them in salted water for about 10 minutes until they are slightly tender. Drain.
2. Chop the bell pepper and onion. Heat oil in a skillet over medium heat.
3. Add the bacon slices to the skillet and cook until crispy. Remove the bacon and leave the drippings in the skillet.
4. Add the diced potatoes, bell pepper, and onion to the skillet. Cook for about 10 minutes until the vegetables are soft and golden brown. Season with salt and pepper.
5. Crack the eggs on top of the vegetables and cook until the eggs reach your desired doneness.
6. Serve the breakfast with the bacon and garnish with fresh parsley.
