Fresh and modern crostini combining the flavor of peas with the creaminess of feta cheese. Perfect appetizer or snack! Preparation Time: 20 minutes
Serving Size: 4-6 people
Ingredients:
- 1 baguette or French bread - 200 g fresh peas (or frozen)
- 150 g feta cheese
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh mint leaves for garnish
Instructions:
1. Slice the baguette into pieces and lightly toast them in the oven or on a skillet until golden brown and crispy. 2. Boil the peas in salted water for about 3-5 minutes until soft. Drain and rinse with cold water.
3. In a bowl, mix the cooked peas, crumbled feta cheese, olive oil, lemon juice, salt, and pepper. Lightly mash the mixture to keep some peas whole.
4. Spread the pea-feta mixture onto the toasted bread slices.
5. Garnish with fresh mint leaves before serving.
