Ingredients:

- A large handful of potatoes
- 1 small sweet potato
- 1 onion
- 1 red bell pepper
- 1 garlic clove (or 2 cloves)
- Cherry tomatoes
- A splash of olive oil
- Salt
- Pepper
- Fresh basil or thyme (optional)

Instructions:

1. Peel and dice the potatoes and sweet potato into small cubes.
2. Peel and finely chop the onion and garlic.
3. Chop the red bell pepper and halve the cherry tomatoes.
4. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté for a few minutes until fragrant.
5. Add the potatoes and sweet potato to the skillet, and cook for about 10 minutes until they start to soften.
6. Add the bell pepper and cherry tomatoes to the skillet, season with salt and pepper, and mix well.
7. Allow the vegetable bake to cook for another 15 minutes, until all the vegetables are tender and beautifully colored.
8. Serve warm, garnished with fresh herbs if desired.
