Herkkutatti Cream Sauce with Ribbon Pasta

A delicious and creamy herkkutatti mushroom sauce combined with ribbon pasta, perfect for a weekend dinner or special occasion. Preparation Time: 30 minutes

Ingredients:
- 1 cup hot water
- 1 oz dried herkkutatti mushrooms
- 2 garlic cloves
- 2 tsp olive oil
- 1 cup heavy cream
- ½ tsp salt
- 1 cup ribbon pasta
- Black pepper to taste
Instructions:
1. Soak the dried herkkutatti mushrooms in hot water for about 15 minutes until they soften. Drain and reserve the liquid.
2. Cook the ribbon pasta according to package instructions until al dente. Drain and set aside.
3. Peel and finely chop the garlic cloves.
4. Heat the olive oil in a pan over medium heat. Add the garlic and sauté until golden brown.
5. Add the softened herkkutatti mushrooms to the pan and sauté for a few minutes.
6. Pour the heavy cream and reserved mushroom liquid into the pan. Add salt and black pepper. Let the sauce simmer on low heat for about 5-10 minutes until it thickens slightly.
7. Stir in the cooked ribbon pasta into the sauce and heat for a moment longer. Serve immediately.
