Description: A delicious and hearty vegetarian lasagna filled with fresh mushrooms, spinach, and a creamy ricotta filling.

Serving Size: 6 servings
Ingredients:
- 9 lasagna sheets
- 400 g fresh mushrooms
- 200 g fresh spinach
- 1 onion
- 2 garlic cloves
- 400 g crushed tomatoes
- 250 g ricotta cheese
- 200 g mozzarella cheese
- 50 g parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., basil or oregano)
Instructions:
1. Peel and chop the onion and garlic. Sauté them in olive oil in a pan until soft.
2. Add sliced mushrooms to the pan and cook until golden brown. Add spinach and cook until wilted. Season with salt and pepper.
3. Mix crushed tomatoes into the mushroom mixture and let it simmer over low heat for about 10 minutes.
4. Grease a baking dish and place a layer of lasagna sheets at the bottom. Add a layer of the mushroom mixture and spoon ricotta cheese over it.
5. Repeat the layers until all ingredients are used up. Finish with lasagna sheets, tomato sauce, and sprinkle mozzarella and parmesan cheese on top.
6. Cover the dish with foil and bake at 180°C (350°F) for about 30 minutes. Remove the foil and continue to bake for another 15-20 minutes until the cheese is golden brown.
7. Let the lasagna rest for a moment before serving. Garnish with fresh herbs and enjoy!
