A delicious and spicy mushroom dish, perfect as a topping for injera. Its simple preparation makes it a great option for weeknight dinners or special occasions. Preparation Time: 30 minutes

Ingredients:
- 400 grams of mushrooms- 1 green bell pepper, sliced
- 1 large red onion, sliced
- 2 medium tomatoes, diced
- 2 tablespoons of oil (or clarified butter)
- 2-3 tablespoons of berbere spice mix
- 2 garlic cloves, minced
- 1-2 teaspoons of lemon juice
Instructions:
1. Heat the oil or clarified butter in a large frying pan.2. Add the sliced red onion, bell pepper, and diced tomatoes. Sauté over medium heat for about 4 minutes until the vegetables soften.
3. Add the chopped mushrooms to the pan and fry on high heat.
4. Stir in the berbere spice mix, minced garlic, and lemon juice. Cook for another 3 minutes or until the mushrooms are tender.
5. Serve garnished with fresh parsley or cilantro.
