A delicious and creamy mushroom soup that warms the heart and body. Perfect as an appetizer or a light main course. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g mushrooms
- 1 onion
- 2 garlic cloves
- 300 ml vegetable broth
- 200 ml cream
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onion and garlic.
2. Clean the mushrooms and slice them.
3. Heat the butter in a pot over medium heat, and add the onion and garlic. Sauté until they are soft.
4. Add the sliced mushrooms to the pot and cook for about 5 minutes, until the mushrooms are soft and the liquid has evaporated.
5. Pour in the vegetable broth and let it simmer for about 10 minutes.
6. Blend the soup with an immersion blender to your desired consistency.
7. Stir in the cream and mix well. Heat for a moment, but do not let it boil.
8. Season with salt and pepper.
9. Serve the soup garnished with fresh parsley.
