Ingredients:
- 3 room temperature egg yolks
- 1 tbsp white wine vinegar
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper to taste
- 150 g butter (melted)
Instructions:
1. In a bowl, whisk together the room temperature egg yolks, white wine vinegar, lemon juice, Dijon mustard, salt, and pepper.
2. Place the bowl over a double boiler and heat the mixture over low heat, stirring constantly until it begins to thicken.
3. Gradually add the melted butter in a thin stream while continuously whisking until the sauce is creamy and pale.
4. Taste and adjust seasoning with more salt and pepper if needed.
5. Serve immediately with steamed vegetables or alongside an omelet.
