This delicious mushroom spread is quick to make using forest mushrooms like chanterelles, and it tastes excellent on bread. The creamy texture from the cashews makes it a perfect umami bomb!
Preparation Time: 15 minutes
Serving Size: Approximately 4-6 servings
Ingredients:
- 200 g chanterelle mushrooms (or other forest mushrooms)
- 100 g cashew nuts
- 1 small onion
- 2 tbsp olive oil
- 1 tbsp fresh thyme (or 1 tsp dried)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lemon juice
Instructions:
1. Soak the cashew nuts in water for about 30 minutes and then drain.
2. Finely chop the onion and sauté it in olive oil in a pan over medium heat for about 2-3 minutes until softened.
3. Add the chanterelle mushrooms to the pan and cook for another 5-7 minutes until the mushrooms are cooked and the moisture has evaporated.
4. Transfer the cooked mushrooms and onions to a blender. Add the drained cashew nuts, thyme, salt, black pepper, and lemon juice.
5. Blend the ingredients until smooth to create a spread.
6. Serve on bread or use in your favorite way.
