A delicious braised red cabbage combined with roasted cashews offers flavor and nutrients. Perfect as a side dish or a light main course.

Ingredients:

- 500 g red cabbage
- 1 bay leaf
- 200 ml apple juice
- 2 tsp thyme
- 2 tbsp blackcurrant jelly
- 100 g cashew nuts
- 2 tbsp oil
- 1 tbsp red wine vinegar
- 0.5 tsp salt
- 5 whole cloves
- 0.25 - 0.5 tsp salt (to taste)

Instructions:

1. Slice the red cabbage finely.
2. Sauté the cabbage in oil in a large pot over medium heat for about 5 minutes.
3. Add the bay leaf, thyme, salt, apple juice, blackcurrant jelly, and cloves. Mix well.
4. Allow to simmer on low heat with the lid on for about 30 minutes, until the cabbage is tender.
5. Toast the cashew nuts in a dry pan over medium heat until they are golden brown.
6. Add the toasted cashew nuts to the braised cabbage and stir gently.
7. Finally, add the red wine vinegar and check the seasoning. Adjust salt if necessary.
