A delightful and moist cake made with fresh plums, perfect for any occasion.
Preparation Time: 15 minutes
Cooking Time: 40-45 minutes
Serving Size: 8-10 servings
Ingredients:
- 4 dl fresh plums (pitted and chopped)
- 2 dl sugar
- 3 dl all-purpose flour
- 2 tsp baking powder
- 1 tsp vanilla sugar
- 1 dl milk
- 1 dl oil
- 3 eggs
- A pinch of salt
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. Chop the plums and place them at the bottom of the prepared pan.
3. In a bowl, mix together the sugar, eggs, and oil. Whisk the mixture until it is light and fluffy.
4. Add the milk and mix well.
5. In another bowl, combine the flour, baking powder, vanilla sugar, and salt. Gradually add the dry mixture to the wet mixture and stir until smooth.
6. Pour the batter over the plums in the pan.
7. Bake in the oven for about 40-45 minutes, or until the cake is golden brown and cooked through (test with a toothpick).
8. Allow to cool before serving. Invert the cake onto a serving plate and enjoy!
