A delicious and nourishing soup made with sweet potato puree, perfect for an easy weeknight dinner.

Ingredients:

- 500 g sweet potato puree
- 1 liter vegetable broth
- 1 onion
- 2 garlic cloves
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon curry powder
- 100 ml coconut milk (optional)
- Fresh cilantro for garnish (optional)

Instructions:

1. Peel and chop the onion and garlic.
2. Heat olive oil in a pot and add the onion and garlic. Sauté until soft.
3. Add the sweet potato puree and vegetable broth to the pot. Mix well.
4. Season with salt, black pepper, and curry powder. Allow to simmer for about 10 minutes.
5. If you prefer a creamier texture, stir in the coconut milk.
6. Blend the soup with an immersion blender to reach your desired consistency.
7. Serve hot and garnish with fresh cilantro if desired.
