A delicious and easy-to-make sweet potato soup, perfect for warming both body and soul.

Serving Size: 4 servings
Ingredients:
- 500 g sweet potatoes
- 1 onion
- 2 cloves of garlic
- 1 liter vegetable broth
- 100 ml coconut milk
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh coriander (for garnish)
Instructions:
1. Peel and chop the sweet potatoes, onion, and garlic.
2. Heat olive oil in a pot and sauté the onion and garlic until soft.
3. Add the sweet potatoes to the pot and pour in the vegetable broth. Cook until the sweet potatoes are completely soft, about 15-20 minutes.
4. Blend the soup using an immersion blender or regular blender until smooth.
5. Stir in the coconut milk and season with salt and pepper. Heat the soup once more.
6. Serve the soup hot and garnish with fresh coriander.
