Smoked Salmon Spaghetti

A creamy and flavorful dish combining smoked salmon with spaghetti, perfect for a quick dinner.

Serving Size: 2 servings
Ingredients:
- 225 g spaghetti
- 2 tbsp oil
- 1 dl white part of leek, finely chopped
- 1 dl fennel, finely chopped
- 1 dl grated Parmesan cheese
- 1 dl cream
- 1 dl reserved pasta cooking water
- 1 dl white wine
- 200 g smoked salmon, cut into small pieces
- Zest and juice of 1/2 lemon
- Black pepper, to taste
- Salt, to taste
- 1 tbsp capers
Instructions:
1. Cook the spaghetti in a large pot of salted water until al dente, about 8-11 minutes.
2. In a pan, sauté the leek and fennel in oil for about 5 minutes.
3. Add the Parmesan, cream, reserved pasta water, and white wine to the pan. Let simmer for a few minutes.
4. Drain the spaghetti and add it to the pan along with the smoked salmon, lemon zest, lemon juice, and capers. Mix well.
5. Season with black pepper and salt to taste.
6. Serve immediately and enjoy!
